Leftover Food Idea: Buffalo Chicken Salad

Very few ingredients are needed to make this dish, and once you see the process, you’ll be able to adjust the meal to your liking. Ingredients

(4-6 servings)

– 2-3 pounds of boneless chicken breasts
– 1 bottle of Buffalo Franks Sauce
– 1 small onion
– 2 carrots
– 2 celery sticks
– 3 tablespoons Worcestershire sauce
– 1 8 oz. tomato sauce can
– olive oil (cooking oil)
– Hawaiian rolls (or hamburger bun)
– 1 can of tangerines
– 1 can of pineapple in pieces
– salt and pepper

Buffalo Chicken Salads

– Vegetable salad of your choice
– Parmesan cheese (optional)

1. Open the package of chicken and rinse each piece under cold water in the sink. Using a knife, carefully cut the chicken into small, thin strips, one at a time.

2. Rinse the celery and carrot sticks and, using a sharp knife, cut into small pieces no larger than a half-inch. You can skip this step if you decide you don’t want to add carrots and celery to your buffalo chicken mix.

3. Peel the onion and chop again until you have 1/4 cup left.

4. In a skillet over medium heat, add 3 tablespoons of olive oil (or other cooking oil you have) and the chopped onions, carrots, and celery. Stir frequently for 3-5 minutes until the onions turn slightly translucent.

5. Add the chicken pieces directly to the pan and cook for a few minutes on each side. As the chicken browns, use the wooden spoon to cut into even smaller pieces. Total cooking time should be about 12-15 minutes.

6. In a bowl, add the ketchup, the whole bottle of Frank’s Buffalo Hot Sauce, and the Worcestershire sauce. Stir well.

7. After the chicken’s cooking time has finished, carefully place the entire pot in a colander over the sink to help remove any liquid from the mixture. Then return the chicken to the same pan. After that the buffalo sauce is made directly on the chicken and mixed well.

8. Turn the stove back on to medium low and stir to mix well. Let cook for about 5-7 minutes so the sauce soaks into the chicken.

Leftover Idea: Buffalo Chicken Salad

Here is a great travel lunch to take to work that will be healthy and filling. The only additional items you’ll need are your preferred type of lettuce/vegetables and Parmesan cheese (along with plastic travel containers). Simply wash and chop the amount of lettuce you want to have for your salad, add a few drops of Parmesan cheese, and place in a plastic container if you plan to enjoy this salad the next day. Then use a separate container for the buffalo chicken making sure you have a good amount of sauce to go with it. It helps keep the lettuce crisp if you keep the chicken separate until ready to eat.
