Healthy meal of the week: Baked Glazed Ham, Mixed Greens, Mashed Potatoes
Leftover idea: Glazed Ham Wrap

Here’s a meal to get everyone in the mood for the next vacation: Baked ham with a tasty apricot / pineapple glaze, mixed vegetables, and mashed potatoes. To top it off, with just a slice of baked ham along with a healthy whole wheat wrap, you can quickly make it up for lunch the next day.

Think of this as a pre-Thanksgiving warm-up. In fact, you can enjoy this frosting so much that you’ll be using it as a main dish next Thursday or whenever you want to whip up a ham or turkey. Give it a try to see what you think! It is really simple to do and takes less than 10 minutes.

Ingredients
(6-8 servings)
– 2-3 pounds of precooked ham
– 1 bag of frozen mixed greens
– Instant Potato Sprouts (you will also need milk, butter and salt)
for frosting:
– 1/4 cup dark brown sugar
– 1 tablespoon Dijon mustard
– 8 oz. apricot jam
– 1 can of sliced ​​pineapples
– 2 butter spoons
– 1/2 cup white onion, minced

For the leftover ham wrap:
– low calorie whole wheat wraps
– grated mozzarella cheese
– optional: lettuce leaves

1. Preheat the oven to 325 degrees. Hopefully, the precooked ham you bought already has precooked cuts for you. You can simply take a sharp knife and continue those cuts 3/4 of the way to the bottom of the ham. Doing this allows the glaze to seep in and really flavor the entire piece of meat and not just stay on the outside.

two. To make the frosting sauce, first dice a white onion into small pieces until you have about 1/2 cup. In a saucepan over low heat put the 2 tablespoons of butter together with the 1/2 cup of chopped onion. Stir well for about 6-7 minutes.

3. Add 1/4 cup dark brown sugar, 2 tablespoons Dijon mustard, 8 oz. canned apricot and 3 pineapple slices, but only add 1/4 cup of the pineapple juice from the can (do not add all the contents). Continue to stir the mixture well for another 7-8 minutes on medium / low heat.

Four. Place the ham on a baking sheet and carefully pour the glaze mixture over the ham. Try opening the slices with a fork or other utensil so the frosting has a chance to cover each side of each piece. You can put a pineapple slice or two on top and use the rest of the pineapple slices that should still be in the can around all of the ham.

5. Place uncovered skillet in oven on center rack and cook for one hour. If possible, carefully remove after 1/3 of the cooking time has passed so you can put the glaze back over the entire ham, and once more after another 1/3 of the time has passed. This really helps the meat get coated in that delicious apricot pineapple glaze.

6. While the ham is cooking, you can start to boil the frozen mixed greens. These will only take about 15 minutes, so you may want to wait a bit until the ham is half cooked. When ready, bring 4 cups of water to a boil and add the whole bag of frozen mixed vegetables.

7. Finally, the mashed potatoes (which takes less than 8 minutes), check the side of the box for instructions on how many servings you want to make. Note that if you plan to have mashed potatoes for leftover meals or to add to ham wraps, you may want to do a bit more to have enough afterward.

8. When serving your proper serving size, pour a tablespoon or two on top of the ham and even the potatoes if desired. That frosting is delicious so I hope you enjoy it!

Leftover Food Idea: Glazed Ham Wrap
This is a simple leftover lunch idea that you can make in under a minute, as long as there is at least one piece of ham left. The only extras you’ll need are some shredded mozzarella cheese, lettuce, and a whole wheat wrap. These whole wheat wraps are great to keep on hand because they are only 50 calories each, unlike a flour tortilla which can have up to 150 calories each.

Take the piece of glazed ham and cut it into small pieces. You can put a few lettuce leaves in the whole wheat wrap if you like, then place the ham chunks and sprinkle in a heaping tablespoon of mashed potatoes. Top with some grated mozzarella cheese and wrap carefully like a burrito. You can store this wrap on a piece of aluminum foil inside the refrigerator until you are ready to take it to work. Enjoy it along with a fruit and a bottle of water and you have a great, healthy lunch much better (and cheaper) than a fast food.
